8½ Otto e Mezzo Bombana (Central)
Dubbed “the king of white truffles”, master chef Umberto Bombana never disappoints during this time of year. At 8½ Otto e Mezzo – the only Italian restaurant outside of Italy to hold three Michelin stars – he’s come up with five seasonal dishes, all designed to showcase the famed white diamond from Italy. Try the warm blue lobster with Alba white truffle, or go for the tortello – one of Bombana’s many delicious handcrafted pastas. To end, don’t miss the white truffle ice cream.
Sabatini (Tsim Sha Tsui East)
This Roman restaurant has long been one of the best places in town to enjoy white truffles. Chef de cuisine Claudio Favero crafts eight dishes this season, all adorned with shaved white truffle from Alba, Italy. Highlights include the simple but sophisticated organic scrambled eggs with country bread and white truffle to the ever-classic homemade egg tagliolini in butter sauce with truffles. Aside from the à la carte creations, there’s also a six-course tasting menu featuring two white truffle dishes for $1,580 per person.
Paper Moon (Tsim Sha Tsui)
While a lot of restaurants serve truffles from Alba, Paper Moon’s executive chef Giuliano Dacasto travelled to Savigno – a comune near Bologna – to source his truffle supply this season. The comune produces some of the world’s finest white truffles, which you can try in a series of new dishes Dacasto’s designed for the restaurant. Highlights include the robiola cheese fondue with corn meal cake and duck egg, as well as a pizza topped with pork jowl, porcini, cheese and generous shavings of the aromatic fungi.
Artisan de la Truffe (Tsim Sha Tsui)
Originally from Paris and with outlets in Japan and Germany, the Hong Kong branch of Artisan de la Truffe opened just in time for white truffle season. The 3,000 sq ft restaurant offers a wide range of indulgent dishes, such as foie gras poêle, various pastas, steaks and seafood – all adorned or infused with the prized fungi. Even desserts feature the aromatic mushroom, including the pain perdu French toast with vanilla ice cream and truffle honey.
DiVino Wine Bar and Restaurant (Central)
At this sleek Italian restaurant and wine bar, guests are encouraged to get adventurous with how they enjoy their Alba white truffles, meaning you can have it with any dish you fancy. If you’re not sure where to begin – DiVino does have a pretty extensive menu after all – chef Michele Senigaglia can offer a few recommendations, such as the the 36-degrees onsen egg on castelmagno cheese fondue, or buffalo ricotta dumplings with grana padano cream.
